新米を買ったとき、意外と迷うのが「水加減」です。

「新米は水を少なめにした方がいい」

そんな話を聞いたことがある方も多いのではないでしょうか。

長野県・伊那谷でお米を育てているファーム有賀です。

結論からいうと、

新米だからといって、必ず水を少なくする必要はありません。

お米の水分量や品種、炊飯器、そして好みの食感によって、ちょうどいい水加減は変わります。

まずは普段の水加減を基本に炊いてみて、そこから少しずつ調整する。

これが失敗しにくい方法です。

今回は、令和8年産(2026年産)の新米シーズンに合わせて、新米の水加減、浸水時間、炊き方、さらに品種ごとの楽しみ方まで、米農家の目線からご紹介します。

新米は水を少なめにする?

昔から「新米は水分が多いから、水を少なめに」とよく言われます。

ただし、すべての新米を一律に水少なめで炊けばいい、というわけではありません。

同じ新米でも、お米そのものの状態や品種によって炊き上がりは変わります。

さらに、やわらかめが好きなのか、粒感を残した少しかためのご飯が好きなのかによっても変わります。

そのためファーム有賀では、

最初の一回は炊飯器の通常の目盛りを基本にする。

という方法をおすすめします。

実際に食べてみて、やわらかければ次回は少し水を減らす。

かたければ少し増やす。

一度の炊飯で決めつけず、自分の好きな炊き上がりを見つけてみてください。

新米を炊く前の「洗米」も大切

水加減だけでなく、炊く前の扱いも大切です。

お米を洗うときは、最初に入れた水を手早く捨てます。

その後は、お米を強くこすり合わせるというより、やさしく洗うイメージで。

現在のお米は、昔のように力を入れてゴシゴシ研ぐ必要はありません。

特に新米は、せっかくの粒を割らないように、やさしく扱ってみてください。

新米の浸水時間はどのくらい?

洗米したら、炊飯前にお米へ水を吸わせます。

目安として、まずは30分程度から試してみると扱いやすいと思います。

気温や水温が低い時期は、少し長めにとっても構いません。

ただし、炊飯器によっては吸水工程を含んだ炊飯プログラムもあります。

お使いの炊飯器の説明書も確認してください。

大切なのは「何分なら絶対に正解」と考えすぎないこと。

お米、季節、炊飯器によって条件は少しずつ変わります。

炊飯器で新米をおいしく炊く基本

家庭で一番簡単なのは、やはり炊飯器です。

① お米を計量する

② やさしく洗米する

③ 基本の水量に合わせる

④ 必要に応じて浸水する

⑤ 炊飯する

⑥ 炊き上がったら、やさしくほぐす

炊き上がった後も大切です。

しゃもじを入れて、底からふんわり返すようにほぐします。

余分な蒸気を逃がしながら、お米の粒をつぶさないように。

これだけでも食感が変わります。

土鍋で炊く新米もおすすめ

時間のある日は、土鍋で炊く新米もおすすめです。

炊いている途中の香りや、蓋を開けた瞬間まで含めて楽しめるのが土鍋のおもしろさです。

土鍋は製品によって厚さや火加減、炊飯時間が異なるため、まずはお使いの土鍋の基本レシピを基準にしてください。

そして炊き上がったら、しっかり蒸らしてから蓋を開けます。

最初の一口は、ぜひ何もかけずに。

新米そのものの香り、甘み、粒感を味わってみてください。

品種によって、新米の楽しみ方は変わる

ここが、お米のおもしろいところです。

「新米」という一つのお米があるわけではありません。

品種によって、粘り、粒感、甘み、口当たりが違います。

それぞれの特徴を意識すると、炊き方もさらに楽しくなります。

コシヒカリ

まずは基本の水加減から。

甘み、粘り、食感のバランスを楽しみやすい、王道のお米です。

炊きたての白ごはんはもちろん、おにぎりにも。

ミルキークイーン

もちもちした食感と粘りを楽しみやすい品種です。

もともとやわらかく、もちっとした方向に炊き上がりやすいため、やわらかすぎると感じた場合は、次回から水を少しずつ調整してみてください。

冷めても食感を楽しみやすいので、お弁当やおにぎりにもおすすめです。

風さやか

すっきりとした食べやすさが魅力の長野県生まれのお米です。

毎日の食卓で、おかずと一緒に楽しみたい品種。

まずは基本の水加減で炊いて、好みの食感へ調整してみてください。

亀の尾

亀の尾で楽しんでほしいのが、しっかりとした粒感。

やわらかく炊きすぎるよりも、一粒一粒の存在を感じられる仕上がりを目指すと、亀の尾らしさを楽しみやすくなります。

ササシグレ

ファーム有賀の令和8年産ササシグレを実際に食べて感じたのは、柔らかな口溶けと、ほのかで上品な甘み。

さらっと口の中に入る軽やかさがあります。

必要以上にやわらかくするより、その軽やかな食感を楽しむ方向がおすすめです。

新米の水加減で失敗したら?

一回目が思った通りに炊けなくても大丈夫です。

少しやわらかかった。

少しかたかった。

それが、次の水加減を決める基準になります。

やわらかすぎたら、次回は水をほんの少し減らす。

かたかったら、ほんの少し増やす。

大きく変えるのではなく、少しずつ。

自分の家の炊飯器と、自分の好きな食感に合わせていくのが一番です。

新米は、保存方法も大切です

新米のおいしさは、炊き方だけで決まるものではありません。

収穫した後、どんな状態で保存されてきたのか。

そして、いつ籾摺り・精米されたのか。

ファーム有賀では、収穫したお米を籾の状態で低温保存し、お届けに合わせて籾摺り・精米しています。

秋に一年分をすべて白米にしてしまうのではなく、食べていただく時期に合わせて次の工程へ進めます。

新米を選ぶときは、「いつ収穫されたか」だけでなく、

「その後、どう保存されてきたか」

にも少し注目してみてください。

白米だけじゃない。玄米・5分づきという選択

同じお米でも、白米、玄米、5分づきでは食感や風味が変わります。

品種を選ぶ。

精米方法を選ぶ。

そして、自分の好きな水加減で炊く。

毎日食べるお米だからこそ、自分好みを探してみるのも楽しいと思います。

まずは、新米を一杯。

新米をおいしく炊くために、難しいことをする必要はありません。

やさしく洗う。

基本の水加減から始める。

炊き上がったら、ふんわりほぐす。

そして一度食べてから、次の炊飯で自分好みに少し調整する。

「新米だから水を少なくする」と決めてしまうより、そのお米を一度食べてみる。

それが、おいしい炊き方を見つける一番シンプルな方法だと思います。

How Much Water Should You Use for New-Crop Japanese Rice? A Rice Farmer’s Guide

When cooking newly harvested Japanese rice, one of the most common questions is:

“Should I use less water for new-crop rice?”

We are Farm Aruga, a rice farm in the Ina Valley of Nagano, Japan.

Our simple answer is:

Not necessarily.

The ideal amount of water depends on the rice variety, the condition of the rice, your rice cooker and, most importantly, the texture you enjoy.

Rather than automatically reducing the water, we recommend beginning with the normal water level and adjusting it slightly after tasting your first batch.

Should new-crop rice be cooked with less water?

In Japan, people have traditionally said that freshly harvested rice contains more moisture and therefore requires less cooking water.

However, not every batch of new rice is exactly the same.

Different varieties also produce different textures.

For your first batch, start with the standard water level recommended by your rice cooker.

If the rice feels too soft, use slightly less water next time.

If it feels too firm, add a little more.

Small adjustments are usually better than making a large change at once.

Wash the rice gently

Good rice begins before cooking.

When washing the rice, add water and drain the first water quickly.

Then wash the grains gently rather than rubbing them aggressively.

There is no need to scrub modern Japanese rice heavily.

Especially with new-crop rice, try to avoid damaging the grains.

How long should new rice soak?

As a simple starting point, allow the rice to absorb water for around 30 minutes.

When the water temperature is low, a slightly longer soaking time may be useful.

Some modern rice cookers already include an absorption stage in their cooking program, so always check the instructions for your particular cooker.

Cook

Gently fluff after cooking

Once the rice is cooked, gently turn it from the bottom with a rice paddle.

This releases excess steam while helping preserve the texture of the individual grains.

Cooking new rice in a donabe clay pot

New-crop rice is also wonderful when cooked in a Japanese donabe clay pot.

Because clay pots differ in thickness and design, cooking times and heat levels vary.

Start with the basic instructions for your particular donabe.

After cooking, allow the rice to steam before opening the lid.

Then gently fluff the grains.

For the first bite, try the rice without any seasoning and enjoy its natural aroma and texture.

Different Japanese rice varieties have different textures

There is no single texture called “new rice.”

Every variety has its own character.

Koshihikari

A classic Japanese rice with a well-balanced combination of sweetness, stickiness and texture.

Start with the standard amount of water and adjust according to your preference.

Milky Queen

Milky Queen is known for its soft, sticky and chewy texture.

If your first batch feels too soft, slightly reduce the water on your next attempt.

It is also excellent for rice balls and bento lunches.

Kazesayaka

A Nagano-born variety with a clean and easy-to-eat character.

It pairs naturally with everyday meals.

Kame-no-O

Kame-no-O is particularly enjoyable for its distinct grain texture and elegant finish.

We like to preserve the presence of each grain rather than cooking it excessively soft.

It pairs especially well with Japanese dishes such as sashimi and grilled fish.

Sasashigure

Our 2026 Sasashigure has a soft mouthfeel, subtle elegant sweetness and a light finish.

We recommend cooking it in a way that preserves this delicate, easy-to-eat character.

Storage matters too

Cooking is only one part of enjoying good rice.

How the rice was stored after harvest also matters.

At Farm Aruga, we keep our rice as paddy rice under low-temperature storage and prepare it closer to the time of shipment.

Rather than processing the entire harvest into white rice at once, we move to the next stage according to when the rice will be delivered.

Start with one bowl

There is no need to make cooking new rice complicated.

Wash it gently.

Start with the normal amount of water.

Fluff it after cooking.

Then taste it.

If you want it firmer or softer, make a small adjustment the next time.

The best water level is ultimately the one that makes the rice taste best to you.
