How to Keep Japanese Rice Fresh All Year: Paddy Rice vs. Brown Rice Storage

Updated September 2026

We are Farm Aruga, a rice farm located in the Ina Valley of Nagano, Japan.

The new rice season has arrived once again.

When people think of Japanese new-crop rice, they often imagine freshly harvested rice being the most delicious.

Freshly harvested rice certainly has a unique aroma, moisture and texture.

But as rice farmers, we believe something else is just as important:

how the rice is stored after harvest.

And also,

when the husk is removed and when the rice is milled.

Rice harvested in autumn may be eaten throughout winter, spring and even the following summer.

That is why post-harvest storage matters.

What is the difference between paddy rice, brown rice and white rice?

Rice does not become white rice immediately after harvest.

The basic process is:

Rice plant → Paddy rice → Brown rice → White rice

Paddy rice is rice that still has its natural outer husk.

When the husk is removed, it becomes brown rice.

When the bran layers are polished away, it becomes white rice.

The stage at which rice is stored can make a difference in how it changes over time.

What is paddy rice storage?

Paddy rice storage means keeping harvested and dried rice with its natural husk still intact.

Instead of removing the husk immediately after harvest, the rice remains in its paddy form until it is needed.

We then remove the husk when the rice is ready to be prepared for shipment.

At Farm Aruga, this is the storage method we use for our rice.

What is brown rice storage?

Brown rice storage means removing the outer husk first and storing the rice in its brown rice form.

Brown rice takes up less space than paddy rice and is easier to prepare for milling and shipment.

However, once the husk has been removed, storage temperature and humidity become especially important.

How does Farm Aruga store rice?

For our 2026 harvest, we do not process the entire crop into brown or white rice immediately.

Instead, we keep the rice as paddy rice under low-temperature storage.

When an order is ready to be shipped, we remove the husk from the amount needed.

If you choose white rice, we then mill it.

If you prefer brown rice, we leave it as brown rice.

We also offer partially milled rice.

Our philosophy is simple:

store the rice first, and process it closer to the time it will be eaten.

New-crop rice is not only about the harvest date

Harvest time is important, but rice does not stop changing once it leaves the field.

Harvesting, drying, storage, husking, milling and cooking all play a part in the final bowl of rice.

When choosing rice, we believe it is worth asking not only,

“Is this new-crop rice?”

but also,

“How was this rice stored after harvest?”

Brown rice, partially milled rice or white rice?

Brown rice is ideal for those who want to enjoy rice in a more natural, less processed form.

Partially milled rice offers a balance between the character of brown rice and the softness of white rice.

White rice is easy to cook and allows the flavor and texture of each variety to shine.

There is no single correct choice.

The best rice is the one that suits your lifestyle and the way you enjoy eating it.

You do not need to store a year’s supply of rice at home

This is the idea behind Farm Aruga’s annual rice subscription.

We reserve your year’s supply of rice at the farm.

The rice remains in low-temperature paddy storage.

When you need more rice, we prepare the required amount, husk it, mill it according to your preference and ship it directly to your home.

Delivery frequency can also be adjusted according to your household’s rice consumption.

Instead of storing a year’s supply at home,

your rice is kept for you here at the farm.

Enjoy the taste of new rice throughout the year

Autumn new-crop rice is special.

But our goal is not simply to produce rice that tastes good in autumn.

We want our rice to be enjoyed through winter, spring and the following summer.

That is why we store it as paddy rice under low-temperature conditions and process it according to each shipment.
